Super Saiyan was the main transformation for Dragon Ball series since Goku unlocked SSJ fighting Frieza on Namek all the way back DBZ. With the debut of Ultra Instinct v Dragon Ball SuperTournament of Power though Dragon Ball changed the game by more or less abandoning the various levels of Super Saiyan in favor of personalized transformations that are unique to different characters.
Personal transformations are the best Dragon Ball Super did for the series, turning the molds into true expressions of each character's personality and skills. Between Ultra Ego Vegeta and Gohan Beast, Dragon Ball forms just mean more when they're not just paint jobs that each character can unlock with almost no effort or narrative weight.

Super Saiyan Rage Future Trunks is basically a form of God
IN Dragon Ball Super anime, Future Trunks unlocks Super Saiyan Rage, a unique transformation that contains almost no information that hasn't been seen since the last battle with Zamasu. Super Saiyan Rage visually looks like an intermediate form of Future Trunks' Super Saiyan 2 and Super Saiyan Blue.
Future Trunks is implied to have absorbed some of Super Saiyan Blue Vegeta's God Ki when they previously trained together in the Goku Black Saga, similar to how Vegeta absorbed God Ki naturally while training on Beerus' Planet under Whis. Future Trunks' Super Saiyan Rage isn't as overwhelmingly powerful as other personal transformations, but it represents Trunks' iron will to do whatever it takes to save his future, giving him enough power to cut Fused Zamasu in two (though it does help him in the end).

Super Saiyan Rosé Goku Black is what happens when Saiyan Ki, God Ki and Kai Ki mix
Super Saiyan Rosé is at its core a version of Super Saiyan Blue, but completely unique to Goku Black due to the mixture of Saiyan Ki, God Ki and Supreme Kai in his body. Notably, Super Saiyan Rosé is actually the first personal transformation he debuts in Dragon Ball Super (because Golden Frieza was actually introduced in va Dragon Ball Z movie and no Dragon Ball Super correctly).
Super Saiyan Rosé makes Goku Black much stronger than Goku or Vegeta and represents his chimera-like nature. Goku Black may have Goku's body and DNA, but he fully possesses Zamasu's ruthless mind and personality. Super Saiyan Rosé is a royal form that perfectly matches Zamasu inside Goku Black, setting it apart from the more rustic Super Saiyan Blue forms that Goku and Vegeta use most of the time. Planet Moro literally merged with Earth
Moro is the only one Dragon Ball a villain who can use Ultra Instinct, but his most unique and powerful transformation occurs when he fuses with the planet Earth itself. After absorbing Merus' angelic powers, Ultra Instinct proves to be too much for Mor's mortal body to handle as it slowly begins to tear itself apart. Desperate to survive, Moro's instability allows him to merge with Earth itself.
Planet Moro is extremely powerful, capable of draining the energy from every living being on its peak. Goku almost failed to defeat Mor completely, only landing a killing blow thanks to Vegeta's use of Forced Spirit Fission and a massive Ki gift from Uuba, who reincarnated with all of Majin Buu's Ki gods intact. Planet Moro represents Moro's instability and constant need to consume to an extreme level.

Orange Piccolo finally rivals Goku & Vegeta after years of falling behind
Akira Toriyama created Orange Piccolo so that Piccolo could finally compete with Goku and Vegeta in terms of power level after years of falling behind in the Dragon Ball Super. Orange Piccolo may be the weakest Dragon Ball SuperFive main characters, but he is one of the few characters strong enough to turn against Black Frieza before the upcoming final saga.
At its core, Orange Piccolo is a form of fanservice – which is fitting considering that Piccolo has always been Akira Toriyama's favorite character. Orange Piccolo brings Piccolo back into the running and hopefully he'll do incredible things in the Black Frieza Saga instead of being sidelined like he was in every arc between the Majin Buu Saga and Dragon Ball Super: Super Hero.

Ultra Ego Vegeta gets stronger the more he fights
Ultra Ego is Vegeta's answer to Ultra Instinct – literally. Where Goku focuses on honing his instincts, Vegeta channels his ego and power into a transformation that better suits his personality and skills. Ultra Ego allows Vegeta to get stronger the longer Vegeta fights and the more damage he takes, two perfect traits considering how often Vegeta gets kicked.
Vegeta first unlocks Ultra Ego while fighting Granolah in Granolah the Survivor Saga, quickly turning the tide against Cerealian. Unfortunately for Vegeta, his mastery of Ultra Ego is so rusty that he drains all of his energy before he can deliver the final blow. However, once Vegeta takes control of Ultra Ego, Goku will be no match.

True Ultra Instinct Goku found a way to stack his forms on the UI
Ultra Instinct is not a form unique to Goku by any means, but True Ultra Instinct certainly is. During the Granolah the Survivor Saga, Goku learns how to activate Ultra Instinct whenever he wants, even when his heart and mental state are not at peace. This turns Ultra Instinct into basically any other transformation, but has the added benefit of allowing Goku to use all the benefits of the Ultra Instinct Sign.
True Ultra Instinct allows Goku to stack his various Super Saiyan forms on top of him, giving him all the Sign enhancements with all the power multipliers of his God forms. During the battle with Granolah, Goku uses both Super Saiyan God and Super Saiyan Blue over True Ultra Instinct to give himself a faster reaction time and higher power level. By the end of the arc, Goku's mastery of True Ultra Instinct is so refined that his power is comparable to his regular Ultra Instinct form.

Gohan Beast is the strongest Z-Fighter Form by a mile
Gohan unlocked his Beast form at the end Dragon Ball Super: Super Hero after Piccolo pretended to sacrifice his life to fight Cell Max to provoke Gohan's rage. In many ways, Gohan Beast is an extension of Gohan's final transformation from the end of the year Dragon Ball Zbringing out all of his latent potential seen throughout the series in one ultra powerful form.
Unlocking the Gohan Beast, Gohan is once again the strongest Z-Fighter and was even able to knock Goku out of Perfected Ultra Instinct while the two were sparring. Black Frieza is a nightmare brought to life
Black Frieza isn't just the strongest personal form Dragon Ball Superit's the strongest transformation in the entire franchise. Not only was Black Frieza able to kill Awakened Gas in one hit in his debut, but he also knocked out True Ultra Instinct Goku and Ultra Ego Vegeta with one ridiculously fast punch that neither character could react to quickly enough. Black Frieza is the pinnacle of Frieza's power, a wild form born from Goku's biggest mistake: subduing Frieza and encouraging him to train.
Black Frieza has been set up as the next (and likely final) villain of the series, but it's unclear who will be able to defeat him. Gohan Beast is extremely powerful on his own, but he isn't that much stronger than Perfected Ultra Instinct Goku at the end Dragon Ball Super: Super Hero. Things don't look good for the Z-Fighters as long as Black Frieza is around.
