Goku, Vegeta, Nappa, Raditz and Broly – everyone Dragon Ball fan knows these Saiyans through manga and anime. Since Frieza destroyed Planet Vegeta, you'd assume there wouldn't be too many Saiyans hiding there, but that couldn't be further from the truth if we examine DBZmultiverse. In fact, some of the most powerful Saiyans aren't part of the canon story at all.
Through games like Dragon Ball Heroes and Xenoversethe franchise can be absolutely wild with new characters, transformations, fusions, reveals and fan fights. Thanks to these side quests Dragon Ball spawned overpowered Saiyans who can solo Super Saiyan 4 Goku or Super Saiyan Blue Vegeta without breaking a sweat.
I only focus on Dragon Ball characters introduced in the games. If you've been watching Super Dragon Ball Heroesyou'll be familiar with a few of these Saiyans, but they're relatively unknown in the grand scheme of things.

Fusion between Dragon Ball LegendsProtagonist Shallot and his brother Giblet, Shallet is arguably the perfect version of a traditional Saiyan-based fusion, as he is made up of two ancestors of the original Super Saiyan God.
Being siblings, Shallot and Giblet are extremely compatible and perfect for the Metamoran Fusion Dance. Despite their genetics, Shallot and Giblet balance each other well, with the former relying on fighting instinct and the latter on calculated precision. Pit Shallet against all DBZ or DBS villain and watch him rise to the top with ease.
Since it's an ultimately lethal fusion, Shallet can't be higher than fifth, but it's an impressive fifth.

We'll leave the inexcusable madness aside Dragon Ball Heroes, Dragon Ball Fusions is the ultimate fanservice game that lets you create the ultimate fighter by combining characters that should never have been combined. You even combine 5 characters together to create an abomination so powerful it only lasts a few seconds.
Introduced as DLC, Karoly Black takes the crown for the craziest fusion in the game, even more so than her “good” counterpart Goku and Broly. By using the Metamo-Ring, Goku Black and Broly largely ignore the standard fusion requirements, allowing them to spawn a monster that defies Dragon Ball'with internal logic. Broly's bottomless pool of physical ki would destroy most bodies, but Goku Black's divine nature creates a perfect god form that is stable and unstoppable.

Primary villain in one Dragon Ball Heroes arc, but then he becomes a good guy.
When Dragon Ball introduced the multiverse and alternate timelines all the way back in Android Saga, which paved the way for alternate reality versions of established characters. Super Dragon Ball Heroes episode 1 shows Goku from DBGT and DBSscreen sharing; it's silly but really fun. While I've mostly avoided including these characters, Xeno Bardock deserves a mention because he's absurdly stronger than his canon counterpart.
In his timeline, Xeno Bardock is saved by the Time Breakers before Freeze destroys Planet Vegeta, and the group then proceeds to mind control the Saiyan with a mask that causes him to cycle dark ki, allowing him to become very strong, very quickly. Even when he finally breaks free and becomes his own Saiyan again, Xeno Bardock retains all of his power and even manages to achieve the Super Saiyan 4 transformation.
This version of Bardock was shaped by battles in the Demon Realm and dimensional rifts; his strength is based on survival rather than discipline and martial arts training.

Although he was not the first villain introduced in Super Dragon Ball HeroesCumber is the first to really leave an impression and is an absolute beast. An ancient pure-blood Saiyan, Cumber operates in a state of uncontrollable primal rage that makes Broly appear balanced and emits an evil aura so all-consuming that it can cause other Saiyans to enter a state of rage. In Super Saiyan 3 form, he is basically on the level of a god-tier fighter like Jiren or Goku in his mastered Ultra Instinct form.

Okay, wait! I know Fu looks he's more from the demon realm than Planet Vegeta, but he really is Dragon Ball's final biological fusion, joining almost together every known race. Created in the laboratory by Towa and Mira, Fu represents their perfect flawless creation, a being that can inherit and lead the demon race. His DNA makeup is an absurd cocktail of Saiyan, Majin, Namekian, and even Freeza bloodlines; heck, he's even part of Dragon Ball because he has Shenron DNA.
Fu also has no random Saiyan DNA, but specifically takes from Goku, Vegeta, Turles, and Cumber. Along with the near-infinite growth cap of the Saiyans, he incorporates the genetic advantages and strengths of the other races and becomes the most OP character in Dragon Ball history. Although his base form is strong enough to take the top spot, Fu's Dark King status puts him well above powerhouses like Beerus or Jiren.
We haven't even gotten to the Cosmic Seed and Cosmic Tree, which essentially allow Fu to absorb life force from all 12 dimensions in the multiverse. As the Dark King, he has almost complete control over the space-time continuum. There is a reason Fu is the main villain Super Dragon Ball Heroesspin-off defined by completely broken characters.
