Sanji is one of the strongest characters in the Straw Hat Pirates and one of the three strongest individuals to represent the Monster Trio in One piece. Known as one of the Wings of the Pirate King, Sanji has always been a monster when it comes to overall combat in the One piece.
Sanji doesn't have the Devil Fruit power. However, he uses his furious kicks in combat. In the Wano Country arc, Sanji gained his greatest ability in the story so far, which is the power of Ifrit Jambe. Basically, Sanji's Ifrit Jambe is simply a major upgrade to his Diable Jambe, which first debuted in the series during the Enies Lobby arc. That's when Sanji used the power against Jabra, but as the story went on, Diable Jambe was definitely not enough for him to take care of stronger enemies. Against the likes of Doflamingo, Sanji's weaknesses were easily exposed as he was unable to break through the powerful Haki of his enemies. To counter these weaknesses, Sanji needed to develop his overall strength even further, and when he was pitted against the Queen of the Beast Pirates, Sanji was forced to evolve. In this fight, Sanji finally developed an even more powerful flame-based ability that took his kicking ability to a whole new level, called Ifrit Jambe.

Advanced Conqueror's Haki is one of the most powerful abilities possessed by the highest level fighters in One Piece and grants them great abilities.
In order to break into Ifrit Jambe, Sanji's latent genetic modifications had to be awakened first. By donning the Raid Suit three times in the Wano country arc, Sanji's latent genetic modifications finally awakened and his body slowly evolved. Sanji developed a very strong exoskeleton and also gained more muscle mass, giving him overall greater strength. Whenever Sanji taps these genetic modifications, his eyebrows swirl in the opposite direction, signifying the use of his new transformation.
Immediately after, Sanji dresses his legs in high quality Haki armor and uses flames of even greater power. Since the exoskeleton increases his overall defensive abilities to a greater extent, Sanji can sustain even hotter flames on his legs, which are blue in color. These flames are what he officially calls an Ifrit Jambe, and they burn so hot that even an ancient Zoan with incredible durability cannot contain them.

Sanji's Ifrit Jambe is so powerful that whenever he uses it, the enemy immediately fell in battle. He first used it against Queen of the Beast Pirates and it was immediately clear that Queen was outclassed when he tapped it. Against Queen Sanji ended the battle with a single attack called Boeuf Burst. It was an extended combo where Sanji landed several kicks on him and finished him off with a powerful punch right in the chest. This blow was so powerful that the Queen was sent flying out of Onigashima and then crashed into the Wano mainland.
Ifrit Jambe: Memories of Hell
After the Boeuf Burst, Sanji also used the power of Hell Memories in the Egghead Arc. To deal damage to Luffy in his Gear 5 form, Sanji connected with Ifrit Jambe: Hell Memories and dealt him a powerful blow. This attack was so powerful that even Luffy with his immense Haki ability and Gear 5 ability felt immense pain and this power was then redirected to Mars.
Ifrit Jambe: Epaule Strike
In the Elbaf Arc, Sanji used Ifrit Jambe again, but this time he used a technique known as the Epaule Strike. This was used against one of Rod's pets from the New Giant Warrior Pirates, and Sanji was shown to have developed his ifrit jambe control to the point where he could casually unleash powerful attacks.

So far, Sanji has only used his formidable Ifrit Jambe ability three times, and each time it has proven to be powerful enough to completely disintegrate an enemy. It goes without saying that Sanji will continue to develop Ifrit Jambe further, especially as he continues to fight in the Elbaf arc. There he will face the power of the Holy Knights and even the demonic slaves of evil such as Dorry and Brogy. Against such powerful foes, Sanji will need the power of Ifrit Jambe and will likely need to take those abilities to the next level, which is where his Conqueror's Haki comes into play.

It goes without saying that Sanji's Ifrit Jambe is one of the most powerful abilities in One Piece, but it's definitely not enough to go up against the likes of Holy Knights and Five Elders. This is simply because these characters are immortal and thus can take massive amounts of damage without any consequences. The only weakness they have is using Conqueror's Haki when attacking. Those who possess Conqueror's Haki can greatly slow down their regeneration, and if used enough can completely incapacitate and defeat them despite being immortal.

Scopper Gaban clearly mentioned that he and the other members of the Roger Pirates used their powerful Conqueror's Haki to break the Holy Knights in the past. If Sanji is to fight the World Government forces, he must further increase the overall firepower of his Ifrit Jambe by enhancing it with Conqueror's Haki. This will further increase his overall defensive abilities as well as his offensive power. As such, he will be able to sustain even hotter flames on his feet as well as deal stronger blows. This means that Sanji's flames will likely change color again, this time probably from blue to black or completely white due to the increase in temperature. Either way, it's undeniable at this point that Sanji's flames will evolve even further.

Ifrit Jambe is already powerful, but he will turn into something even more powerful, probably in the Elbaf arc of One Piece, and in order to do this, Sanji must use the power of the Conqueror's Haki. It's only a matter of time before Sanji becomes even stronger and closes with people like Luffy and makes his way among the elite of the One Piece world, just like Scopper Gaban did in the past.
