God Ki was one of the biggest gameplay changes introduced at the beginning of the year Dragon Ball Super. By unlocking or running God Ki, a mortal Dragon Ball a character can become a literal God and grant them levels of power that were simply not possible Dragon Ball Z. Goku and Vegeta have since become gods, rivaling the strongest fighters in the multiverse, but some of the most powerful characters prove that you don't have to be a god to defeat a God.
By training hard enough, abusing the dragon balls, or simply drawing their full power through transformations, it is possible for a mortal to surpass the gods. Just a couple Dragon Ball mortals are officially stronger than Gods, but even Goku and Vegeta would fight against the charged one.

Jiren is confirmed stronger than most Gods of Destruction
Part of what made Jiren such an intimidating presence during Dragon Ball SuperThe Tournament of Power was the fact that he was confirmed to be the strongest than Universe 11's God of Destruction, Belmod. That's an amazing feat in itself, but doubly so when you consider the fact that Belmod is the third strongest destroyer in the multiverse, putting Jiren above 83% of Gods of Destruction. The only gods stronger than Jiren are Beerus and Quitela.
Even then, Jiren's potential could realistically mean that he was stronger than Quitela. IN Dragon Ball Super manga, Jiren is actually much stronger than Goku and defeats Ultra Instinct fair and square. Jiren knocked Goku straight out of shape and would have knocked him out if Vegeta hadn't caught him in time. There's also the fact that Jiren didn't fight to kill. At full power, Jiren could very well be stronger than any God in existence.

Granolah traded his life for supreme power
The last Cereal, Granolah's people, was destroyed by the Saiyans. Cereals are no match for the Saiyans, but they are naturally powerful warriors whose right eyes give them incredible accuracy and precision, making them deadly snipers. In Granolah the Survivor Saga, Granolah collects the Dragon Balls of Planet Cereal and wishes to become the strongest warrior in Universe 7.
By rewarding most of the life remaining, Granolah gains ultimate power. The nature of Granolah's wish is designed so that he doesn't overcome the Gods of Destruction or the Angels, but is able to push his limits against Goku and Vegeta. At his full power, both of Granolah's eyes awaken and he nearly kills Ultra Instinct Goku and Ultra Ego Vegeta. The fact that Granolah can overpower two of the strongest versions of Goku and Vegeta proves that he will eventually surpass the Gods.

Gas is one of the most broken characters in the series
After Granolah's suit, Elec heads to Planet Cereal, wishing Toronbo to make his brother Gas the strongest being in the universe. Elec's wish is slightly different than Granolah, designed to make Gas stronger whenever he encounters someone more powerful than him. Like Granolah's wish, Elec's wish doesn't take into account destroyers, but it doesn't matter because Goku and Vegeta are already stronger than most gods at this point.
As a result, Gas instantly awakens to a level of power that is far above almost every single God in the multiverse. By the end of the arc, he may even be stronger than Beerus, as his body must constantly adapt to the rapidly increasing power levels of Ultra Instinct Goku, Ultra Ego Vegeta, and Full Power Granolah. Gas is nearly indestructible, able to easily use abilities like Hakai and his weapons. In the end, Gas is only killed because Frieza was outside of Universe 7 at the time of Elec's wish, meaning that Gas could not adapt to Black Frieza's power.

Piccolo is finally on Goku & Vegeta's level thanks to Shenron
Like granolah and gas, Piccolo boosts power Dragon Ball Super: Super Hero comes from Dragon Balls. Although Piccolo only wishes to unlock his potential—triggering his ultimate form—Shenron threw a bonus that became Piccolo's orange transformation. Orange Piccolo is confirmed to be as powerful as Perfected Ultra Instinct Goku and Ultra Ego Vegeta.
This is extremely impressive as Piccolo has caught up to versions of Goku and Vegeta that are radically close to rival Beerus in terms of power level. As long as Piccolo trains, he will remain high above every God in existence and above all without access to God Ki. Although Piccolo is strong, he is definitely the weakest Dragon Ball SuperRight now there are five main characters.

Broly has the potential to surpass Gogeta
Broly's potential is absolutely insane. Without any formal training, he fully surpassed Goku and Vegeta's strongest God forms simply by unlocking the base version of Super Saiyan 1. After unlocking Legendary Super Saiyan, Broly became a God-Tier opponent that Goku rightfully believed to be stronger than Beerus. Broly is so strong that only Gogeta had the strength to defeat him.
Even then Super Saiyan Gogeta flinched when Broly attacked him and had to resort to Super Saiyan Blue to finish him off. It was confirmed that if Broly went True Legendary Super Saiyan during their final battle, he could actually defeat Super Saiyan Blue Gogeta. From Dragon Ball Super Chapter 103, Broly can now use the True Legendary Super Saiyan whenever he wants, elevating him above almost every God in the multiverse.

Gohan Beast is now strong enough to be a god of destruction
Gohan is the strongest he's ever been Dragon Ball Super: Super Herowhich is good because he might be the Z-Fighters' only shot at actually defeating Black Frieza anytime Dragon Ball Super the manga is coming out of hiatus. Gohan Beast is one of the strongest transformations in the franchise, far surpassing Perfected Ultra Instinct, Ultra Ego, Orange Piccolo, and True Legendary Super Saiyan Broly.
Gohan Beast is so powerful that Whis actually thinks he would be a good candidate to replace Beerus as Universe 7's God of Destruction. The only thing holding Gohan back is the fact that he doesn't like destruction, so he would never take that role. IN Dragon Ball Super Chapter 103, Gohan Beast successfully knocks Goku out of Perfected Ultra Instinct and pushes Broly to unlock the True Legendary Super Saiyan by fighting him properly.

Black Frieza is the most dangerous being in the Multiverse
Frieza had always been one of the naturally strongest mortals in Universe 7, but at the time he was nowhere near god level. Dragon Ball Z. Everything changed when he was brought back to life Dragon Ball Super and realized the importance of training. After four months of training, Frieza became a God-level threat stronger than even Super Saiyan Blue. After ten flight training later in Dragon Ball Super manga, surpassed virtually every character in existence.
Black Frieza is the ultimate warrior and is strong enough to defeat Ultra Instinct Goku and Ultra Ego Vegeta without any effort. The full extent of Black Frieza's Power Level remains unknown, but he is undoubtedly more powerful than virtually every single God in the multiverse. At worst, Black Frieza rivals Beerus, but it's entirely possible that Frieza's full power would be enough to kill the god of destruction for good. Since angels cannot fight without wiping themselves out, there is currently no one strong enough to stop Black Frieza.
