However, there are certain characters that didn't appear in the show at all for some reason. Some of these characters are ones that greatly influence the plot of the books, and their exclusion from the show completely changes the trajectory of the story. As fans know by now, the show and the books are different canon, and even though the show has already ended, it's sad that these characters never made it through.
Lady Stoneheart
Lady Stoneheart is a character who plays a significant role in the books. While technically appearing in game of thrones as Catelyn Stark, her story ended at the Red Wedding when a knife was put to her throat and she died alongside her son, the King of the North, Robb Stark.
In the books, she is resurrected by the power of R'hllor, the Red God. Beric Dondarrion gives up his life for her kiss of life and thus Lady Stoneheart is born. As her name suggests, she is a character with a very cold heart and cruel personality. She seeks revenge for what happened to her family and is key to the other plot, as George himself admitted.
Victarion Greyjoy
Victarion Greyjoy is one of the most important characters in the books. The Greyjoy plot was completely destroyed in the show and as such, it's not a huge surprise that Victarion never made it to the show. He is a character who is on his way to Mereen in the books. He has a horn to magically bind dragons to himself, and intends to propose to Daenerys as well.
Victarion has big ambitions and is certainly a man who will change the story significantly moving forward. Unfortunately, for some strange reason, he never made it to the show.
Young Griff
It is clearly stated in the TV show Rhaegar Targaryen's children were murdered before their mother Eliahe was also murdered. This was considered the end of the Targaryen line before Daenerys and Viserys were sent to the Free Cities. In the books though it is believed that Varys the spider smuggled Rhaegar's son Aegon Targaryen to the Free Cities.

Game of Thrones is full of betrayals, but these were the most shocking of all.
Varys is an advocate of Targaryen restoration and currently supports Young Griffwho is actually Aegon. Tyrion meets Young Griff in the fifth book and it turns out that this boy has a certain magic about him. He is currently the leader of the Golden Company and plans to invade Westeros very soon. Unfortunately, his plot was completely deleted from the show.
Jon Connington
Jon Connington he never existed in the series because he is associated with Aegon Targaryen. Jon Connington is believed to have been a very close aide to Rhaegar and therefore plays a significant role in watching over Aegon. Once Aegon was brought safely to Essos, it was none other than Jon Connington who watched over him and oversaw his growth. The man that young Griff is today is up to him.
Jon Connington is also trying to marry Aegon to Daenerys to further solidify his claim to the throne.as well as securing the services of the Golden Company, a group of powerful sales swords. Unfortunately, Jon Connington does not exist in the series.
Arianne Martell
Arianne Martell is quite possibly one of the saddest exclusions from the TV show Game of Thrones. The whole Dornish plot left a bitter taste in the mouths of fans as it was by far the worst part of the show. Dorne has tremendous potential and the handling of the books is completely different than what the show has achieved.
One of characters that play a significant role in the Dornish storyline is Arianne Martell, the eldest daughter of Doran Martell, Prince of Dorne.. In the books, his son Trystane ends up dead after trying to tame Daenerys' dragons. This means big things for Arianne's character as she is now the rightful heir to Dorne. He will no doubt play a significant role in future books. However, there was never even a mention of her in the show.
